Spaghetti Squash "Spaghetti"

Recipe from Iowa Girl Eats


1 medium spaghetti squash

1 Tablespoon olive oil

Seasonings- salt, pepper, Italian, garlic powder

½ cup marinara

½ cup mozzarella cheese, shredded

Instructions: Preheat oven to 400 degrees then line a baking sheet with foil. Wash spaghetti squash well, dry and pierce once with sharp knife. Place squash in microwave for 1 minute. Cut the squash in half with same very sharp knife, and then scrape seeds out with a spoon and place cut side up on the prepared baking sheet. Mist or brush with olive oil then season generously with a seasoning blend of your choice. Bake for 40 minutes to an hour, or until the flesh shred easily. Shred, leaving ¼” squash around the sides of the peel so it doesn’t collapse. Top each half with ¼ cup marinara sauce, and shredded mozzarella cheese before placing back in the oven to bake for 10 minutes or until the cheese is melted. Enjoy!

You can top with prepared or homemade meatballs, or even some sweet Italian sausage.
